Cake that's always a winner in our household

Chocolate Victoria Sandwich.


Yes we are all baking for Britain in this lockdown but here's a recipe that's quick and a winner for all families out there. #chocolatevictoriasandwich




Ingredients Filling


2 tbsp Cocoa Powder 25g Soft Margarine

3 tbsp Boiling Water 87g Icing Sugar

4 eggs 1/2 tbsp milk

225g Self Raising Flour Little Icing Sugar for the top

2 tsp Baking Powder

225g Soft Margarine

225g Caster Sugar

Don't be afraid to use different types of flour, I tend to use 50/50 wholemeal and white flour.”

Pre-heat oven 180 degrees. Grease and base line 2 x 8in tins with greaseproof paper. Blend Cocoa and water in mixing bowl. Measure all remaining ingredients into bowl and beat well until blended. I use my Kitchen Aid (so much quicker) to mix up my cakes and bakes, worth the investment. Divide the mixture evenly between the tins. Bake for about 25 mins.

To make the filling mix all the ingredients together. Spread evenly on top of one sponge then sandwich together. Sieve a little icing sugar for the top. You can always double up on the filling ingredients and add to the top of the cake if you have a really sweet tooth!
