Iced Lemon Buns

Ingredients

225g Soft Margarine

225g Caster Sugar

275g SF Flour

2 tsp Baking Powder

4 eggs

4 tbsp milk

Grated rind of 2 lemons


Topping

225g Icing Sugar

3 tbsp Lemon Juice

Sprinkles (optional)


Method

Pre-heat oven 180°. Mix all the ingredients together in your mixer until smooth and spoon into buns cases. Should make between 18 and 24 buns. Place in oven and bake for 20 mins. Leave to cool.


Sieve the icing sugar and add lemon juice and mix until smooth. Place on top of buns and add sprinkles as you go along.
